Baked Almond Feta

I've made this tons of times for parties and potlucks and it's always a bit. I use almond flour because it is safe for us, but I suspect that coconut flour would also work just fine for a nut-free alternative.


INGREDIENTS

2 cups almond flour (not almond meal)

2 small shallots chopped roughly

4 tbsp lemon juice

3/4 tsp salt 

1 tbs avocado oil

DIRECTIONS

Toss everything in the food processor and blend until a dough forms. 


Using a rubber spatula, scrape the contents into a well-greased ramekin or other oven-safe container


Bake at 325 F for about 1/2 hour.  


Poke holes throughout to allow any steam to release (this part is crucial) and continue to bake until the edges are golden.  


Remove from oven and allow to cool, then transfer to fridge to chill completely.  


Turn out onto your favourite cheese board or plate and serve with crackers.
