These are an awesome lunch or brunch idea, and can be served savoury or sweetened with honey or maple syrup. They freeze well too!
Ingredients:
1/2 cup finely chopped swiss chard (I like to remove the stems but it's your choice. They can be used for vegetable stock if you choose to remove them)
4 or 5 leaves of basil, finely chopped
1 cup of spelt flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tbs ground flax
1 stick of daiya brand non-dairy mozzarella cheese, cut into cubes (use whatever safe brand your family likes)
1 cup of water or dairy-free milk
Directions
Mix in a large mixing bowl all dry ingredients, then combine all other ingredients. If your batter seems too thick, you can add additional water or milk, and if it seems too loose, you can add a little more flour.
Scoop batter onto an oiled, hot waffle iron. When the waffle iron stops steaming, you can remove the cooked waffle and serve immediately. I like mine with vegan butter and creamed honey. Enjoy!
