Coconut Dulce du Leche Sauce

This is a super easy sauce that can be used in any recipe that calls for traditional dulce du leche. I can't wait to try it with a dark chocolate cake, or drizzled on an apple pie. Yum!


Ingredients:

1 250 ml can sweetened condensed coconut milk (I love the Nature's Charm brand if you can find it)

1 400 ml can coconut cream (or just chill your coconut milk and take the cream--save the water for smoothies!)

1/2 cup white sugar

2 tbs molasses


Directions:

In a small sauce pan, whisk together all ingredients until smooth. Bring to a rapid boil and then immediately reduce heat to medium. Using a rubber spatula or wooden spoon, scrape along the sides and bottom, stirring almost constantly ensuring that the bottom is not burning and the mixture doesn't boil over.


Cook on medium heat until the mixture is glossy and thick (around 20 minutes). Remove from heat and let cool in the pot about five minutes. If you want to check that the mixture is thickening nicely, you can drip a bit on an ice cube and see how it will thicken as it is cooled.


Store in a glass jar or container in your fridge until you are ready to use it! Drizzle it on EVERYTHING.
