Easy Oatmeal Muffins

Preheat oven to 400F

Line a standard muffin tin with muffin liner. I prefer silicone ones, but paper is perfect too.


Ingredients

Wet:

2 cups rolled oats

1 cup non-dairy milk

1/2 cup maple syrup

1/3 cup applesauce or canola oil

1/3 cup brown sugar

2 chia eggs

Mix together the wet ingredients and set aside.


Dry:

1 1/2 cups whole wheat flour or 1:1 gluten-free flour

1 tsp baking powder

1/2 tsp cinnamon

1 tsp baking soda

1/2 tsp salt


Optional:

1 cup freeze dried berries or dried fruits

1 cup chocolate chips


Combine dry ingredients with any berries, chocolate chips, seeds etc. Mix with wet ingredients. Fill the lined muffin tins, about 3/4 full with the batter.


Bake approximately 18 minutes.
