My mom makes the world's best soda biscuits. I adapted her recipe using gluten-free flour and it's pretty darn close. Serve these with vegan butter and jam for a perfect morning snack.
Preheat oven to 350F
Ingredients
Dry
3 cups raw buckwheat flour
1 cup coconut flour (almond flour or just 4 cups buckwheat flour would also work)
4 tbs baking soda
1 tsp salt
Combine all dry ingredients in a mixing bowl.
Wet
1/2 cup coconut oil or vegan butter
around 2 cups cold water or non-dairy milk
Rub coconut oil or butter into the dry mixture using your palms until it resembles a breadcrumb texture.
Slowly add in water or milk until a dough forms. It should be firm and pliable but not too dry. Think modelling clay.
Here's the thing: I free form my biscuits because I've been making them all my life. It's probably easiest to roll them out and use a biscuit cutter or the top of a glass to make these.
Place on a parchment lined baking tray and bake about 10 minutes until the bottoms are golden brown.
