This is a great, dairy-free alternative to traditional ranch dressing.
INGREDIENTS
1 cup raw shelled hemp seeds
1 tbsp minced garlic
1 tbsp dijon mustard
1 tsp dried dill (or fresh, whatever you have), more to taste if you like it dilly
1 tsp dried parsley (or fresh, don't sweat it), more to taste if you like it parsley-y
Salt and pepper to taste
Juice from half a medium sized lemon
DIRECTIONS
Put everything into your blender and blend until smooth.
Taste, adjust your seasonings as you see fit. It should be thick but not pasty and not runny (if the texture is too thick, you can add more lemon or a bit of water, if it's too thin, just toss in a few more hempseed and blend.
Pour into a jar or bowl and put in fridge. The longer it sits, the thicker and creamier (and more delicious) it gets.
Serve with crudité or crackers, or use as a spread on a sandwich, or a salad dressing. This keeps nicely in the fridge for quite some time, ours was in for about a week and a half but I think it would have lasted even longer if we hadn't eaten it all :)
